  • Overview

    This position responsible for the cleaning and sanitizing of processing equipment and lines. Works in a supervisory capacity overseeing work of sanitation team. Supervising all aspects of the shift’s sanitation team members. This includes full responsibility for sanitation and oversight of other areas of third shift operations including warehouse, bakery, and maintenance. Supervisor is Responsible for understanding and proper handling of emergency actions on third shift. The Supervisor supervises and coordinates all activities of production as it relates to output, quality and efficiency. The Supervisor is also responsible for enforcing all rules set forth by Palermo’s, USDA and OSHA.


    Review, implement, and enforces Company policies and procedures related to operations area including

    • Safety
    • Food Safety GMPS (Good manufacturing practices) and HACCP
    • 5S
    • Continuous Improvement activities


    • Oversee all Sanitation work
    • Coordinate Sanitation work required maintenance work
    • Develop, Document and confirm all SSOP’s are followed.
    • Must meet all USDA regulation regarding cleaning and Pre-OP
    • Ensure equipment is cleaned and properly set up in time for start up
    • Inspects products and equipment for conformity to federal and state sanitation laws and plant standards. Inspects premises for unsanitary practices and conditions.
    • Prepares and handles sanitation chemicals and equipment.
    • Coordinates sanitation plan with Production and Quality Assurance departments according to production schedules and staffing requirements.
    • Works under immediate supervision of Quality Assurance and Production departments.
    • Supervises staff of 1-2, as well as Production employees assigned to Sanitation duty.
    • Trains staff and Production employees assigned to Sanitation duty on proper sanitation procedures. Performs activities of workers supervised.



    • Utilize bakery schedules and daily paperwork for sanitation cleanings
      • Maintenance
      • Work with maintenance manager on PM Schedule and confirm all work is completed and is following Red Tag process


    • Monitor production to be sure all products are produced to the established specifications and quality set forth by Palermo’s.
    • Monitor production to ensure daily schedule attainment for lines are meet.
    • Supervise daily activities of team members in the operations department.
    • Ensure proper staffing levels are maintained.
    • Monitor material usage on lines to prevent over or under usage of materials.
    • Make sure all production related paperwork is completed according to Palermo, USDA and BRC policies.
    • Must participate in the training of rules, regulations, safety, job expectations through coaching and mentoring to achieve desired performance, GMP’s and CI projects.
    • Help secure building during emergency situations and drills


    Education:  A minimum of an Associates degree (A.A.) or equivalent from a two –year College or technical school


    Related Experience:                                                                                                                   

    A minimum of 3 years of experience in a USDA facility is required or equivalent of education and experience in a manufacturing production environment with specific experience managing sanitation processes.


    Strong leadership and communication skills.


    Mechanical background is a plus.


    Additional Skills: Basic computer skills including prior work on a CMMS system and in Microsoft Office. Bi-lingual Spanish/English capabilities a plus.
